Roasted Okra with Lemon Garlic Aioli

Roasted Okra


1lb okra

2 tablespoon extra virgin olive oil

1 teaspoon garlic powder

1/2 teaspoon sea salt

1/2 teaspoon thyme

1/2 teaspoon cayenne pepper

1/2 teaspoon smoked paprika

1/2 teaspoon onion powder

1/4 teaspoon ground black pepper


Preheat oven to 425 degrees. Wash and cut okra lengthwise. In a large bowl combine okra with olive oil and spices. Toss to coat. Place cut side down on a parchment or silicone lined baking sheet. Bake for 20 minutes. Enjoy with lemon garlic aioli or sauce of your choice.







Lemon Garlic Aioli


1/2 cup vegan mayonnaise (I used Hellman's but Follow Your Heart is also a good brand)

3 gloves of garlic (minced)

2 tablespoons of lemon juice

Salt to taste


Combine all ingredients in a small bowl. It's good to make this in advance so the flavors have time to "marry" together.
